Lunch is often challenging when trying to adhere to a ketogenic diet. Honestly, every day salads are not appealing to all of us.  Please tell me I’m not the only who just can’t make myself consistently eat salads, regardless of how healthy they are for me.  Not to mention I also appreciate variety during the work week and am easily bored with the same foods.

Planning and preparation before the start of the week will help you stay on track. In addition to planning, I also consider the ease of my options. I am not a natural in the kitchen, therefore, recipes have to be simple for me and taste yummy at the same time.

Following a ketogenic lunch diet has also increased my afternoon productivity at work and at home. No more brain fog or feeling like I need to take a nap! This is the best thing about keto lunches.

Shrimp Avocado Salad

Only 15 minutes of preparation time makes this a quick and easy lunch option. The shrimp is the only ingredient that is cooked, which takes about 5 minutes. How great is that! Veggies need diced and there’s a dressing to mix. That’s it. Easy and great tasting.

Low-Carb Chicken Philly Cheesesteak

No need for the hoagie roll to make this a delicious cheese steak. The onion, peppers and provolone cheese make this quite tasty without the extra carbs. This philly cheese steak bowl is definitely filling.  If you’re tired of chicken, consider using beef instead.

Love the creativity of this salad, as I would not have ventured out to try avocado and cauliflower together. The cauliflower may be more fulfilling and satisfying for you, versus salad greens. The burst of flavors in this salad will make you smile while eating lunch.

Lasagna is one of the foods I miss most when eating ketogenic. This is a yummy alternative that fills my craving. Who doesn’t love anything prepared in a simple mug? You can switch the ingredients and layer how you like. The hardest part of preparation is slicing the zucchini thin enough to lessen the crunch.
